主题:人们是否应该避免食用 gulten (谷蛋白,麸质)

  

1. Human digestion not adapted to gluten

It is widely believed that human diets became rich in gluten only during the past 10,000 years, as many societies shifted from hunting and gathering to farming wheat and other grains. For many thousands of years before farming began, the human digestive system did not need to break down gluten, and as a result, our digestive systems may not be well adapted to eating food that contains gluten. We may be much better adapted to digesting foods we have been eating for much longer in our history, such as fruits, nuts, and meats.


1. First, yes, diets that contain gluten may be relatively new in human history. But still, most people can safely and easily digest gluten, because the human digestive system is quite adaptable. The human digestive system contains and relies on beneficial bacteria, and these bacteria evolve quite fast in response to new types of food. Thanks to the bacteria, our digestive system can adapt to new foods quickly. And so it has had enough time to adapt to foods that contain glue.


2. Stomach pain and fatigue

Many people suffer from stomach pain and fatigue (feeling tired) when they eat foods that contain gluten. In one study, some participants were given a diet that included bread with gluten, and others were given bread without gluten. The people whose food contained gluten reported more stomach pain and tiredness than did the people in the other group.


  

2. About the study that blame gluten for stomach pain and fatigue. That study isn't reliable because it wasn't set up properly. If you remember, participants in this study were given two types of bread, but you see, gluten wasn't the only difference between the two types of bread. The samples of bread that were used also contain different types of carbohydrates. Now, some of those types of carbohydrates are known to cause stomach pain and fatigue. So it's entirely possible that some of those carbohydrates were the real cause of the stomach pain and fatigue that people experienced and gluten was not the cause.


3. Memory problems

Some advocates believe that diets that contain gluten increase the risk of diseases that affect the memory. This is because high levels of blood sugar have been linked to inflammation (swelling and irritation) of brain tissue, and many foods that contain gluten cause large increases in blood sugar right after they are eaten. Avoiding foods that contain gluten helps prevent these increases in blood sugar, which may reduce the brain tissue inflammation that leads to diseases that affect the memory.

3. Finally, increases in blood sugar that occur after eating foods that contain gluten are temporary. After a temporary increase, the blood sugar usually goes back down to its lower average levels. Such temporary increases in blood sugar have not been linked to brain inflammation. It's only when the average levels of blood sugar are high for many years that brain inflammation and diseases of the memory occur. And avoiding glutens doesn't necessarily lower a person's average blood sugar levels when those are high. So the link between gluten and potential memory problems seems pretty doubtful.

  Doctor Achebe:Today, we will discuss a topic that is important for students and the public at large: namely, how to prioritize spending, given the limited funding available for schools. Some people think schools should spend more money on school teachers' salaries because it would attract more qualified individuals to the profession. On the other hand, others believe that the money should be allocated towards additional resources such as books and computers. Which viewpoint do you agree with and why?

  Kelly: I believe that increasing teachers' salaries will improve the quality of education. lf they earn more money, people will consider teaching as a viable profession rather than opting for private sector jobs. We need the brightest minds in the classrooms.

  Paul: I acknowledge that school teachers already earn a decent salary and provide high-quality education. I'm not certain how much of an impact increasing their salaries would have. Nonetheless, schools always require new equipment or facilities. Knowledge and technology are constantly evolving, and we need to prepare students with the most up-to-date materials possible.

  From my perspective, teachers’ salaries should be given priority to when considering how to allocate the budget. This is because higher salaries can help attract qualified educators and retain experienced teachers, which may have a significant impact on student learning and achievement. For example, my high school used to face significant challenges in retaining teachers, especially in high-need areas such as math, science, and special education. Many experienced teachers left for positions with higher salaries, impacting the quality of education. In response, a series of initiatives, including increased salary and bonuses, were implemented , particularly in hard-to-fill positions. After these changes, the school saw a notable decrease in teacher turnover rates. Also, it attracted more qualified candidates for teaching positions, many of whom cited improved salary as a primary reason for accepting the offers over competing schools. With experienced teachers remaining in their positions, students benefited from stable classroom environments, consistent instruction, and the opportunity to build strong relationships with their educators over time. Therefore, teachers’ salaries should take the lion’s share when making budgetary decisions.
